TIM STEINBACH
Executive Director
Tim founded Ooh De Lally with a simple, profound vision — create a place where formerly incarcerated individuals could receive culinary training, secure meaningful employment, and build self-sufficient futures. Inspired by social-enterprise pioneers like EDWINS in Cleveland and Homeboy Industries in Los Angeles, he leads ODL's mission to keep inspiring fulfilling futures one meal, one trainee, and one transformed life at a time.
Doug Case
Executive Chef
Doug leads the kitchen at Ooh De Lally, where culinary excellence and second chances meet on every plate. Under his direction, the team has built a menu that's earned a loyal Omaha following — from the Maine-sourced lobster roll to a now-iconic Brussels sprouts dish. "I've seen someone's life transform in the course of two years," he says. "The food's great but it's all about the people."
Joe Lecci
Director of Operations
Joe oversees the day-to-day operations that keep Ooh De Lally running as both a thriving restaurant and a workforce-development engine — coordinating across kitchen, front of house, training, and partner organizations to ensure every shift advances the mission.
BEN DABNEY
General Manager – Ooh De Lally
Ben leads the front of house at Ooh De Lally, shaping the warm, unhurried hospitality that's made the dining room — and Sunday brunch in particular — a weekly tradition for guests across Omaha.
LaRue Marcos
Director of Community Voice & Partnerships
LaRue's path runs straight through Ooh De Lally's mission. After being released from prison at the end of 2024, he was connected to ODL through MCC's 180 Re-Entry Assistance Program — starting as a dishwasher and moving rapidly through prep, line cook, kitchen lead, server assistant, bar back, and server before stepping into his current role. Today he carries ODL's story to the wider community, builds partnerships, and is pursuing further education at the University of Nebraska at Omaha. "This isn't just some cool story you're reading. This is my actual journey happening in real time."
